For years, I convinced myself that a dedicated boning knife wasn’t necessary. A sharp blade is a sharp blade, right? Then I started paying attention to how professional butchers worked. The more I watched, the more I realized there was a reason they weren’t trimming meat with hunting knives. Purpose-built boning knives exist because they make the job faster, easier, and far more efficient.
That realization sent me down a rabbit hole of blade designs, steel types, and butcher-approved tools. Along the way, I came across the Spyderco Shelter Cove. Marketed primarily as a fillet knife, its thin, curved blade immediately struck me as something that could do far more than process fish. After spending time with it on venison and other game meat, I became convinced that the Shelter Cove deserves a place in the processing room just as much as it does in the tackle box.
Spidey Sense
While Spyderco literature mentions filet knife for fishermen, the profile of the Spyderco Shelter Cove, featuring a thin, 5.78-inch upward-curving heat-treated 8Cr17MoV stainless steel full-flat ground blade edge with uniform distal taper from handle to tip, screams boning knife to me. Spyderco heat-treats for the optimal balance of edge retention and flexibility. The Shelter Cove features full-tang construction, contoured G-10 handle scales, an oversized lanyard hole, and a well-done leather sheath.

The Spyderco Shelter Cove is a more affordable production version of Phil Wilson’s custom Shelter Cove design. This stems from the steel used, handle material, and not being a custom-made knife with associated labor involved. The Chinese 8Cr17MoV stainless steel is equivalent to our 440C or Japanese AUS-10, with a higher Chromium content (17%) for high resistance to rust/food acids. The Molybdenum/Vanadium additions make for better steel grain structure, reducing brittleness while still offering a higher HRC rating (58-60).

I will admit to looking up the term “uniform distal taper” as I wanted to make sure my instincts were correct before relaying information to readers. A distal taper refers to the gradual reduction in thickness of a knife blade from the handle/guard to the tip. With a uniform distal taper, this thinning occurs consistently along the blade’s length, creating a smooth transition from thicker base to thin tip. This design affects several key aspects of knife performance by enhancing a knife’s cutting performance, handling, and balance by thinning the blade toward the tip while maintaining strength at the base. By tapering the blade, the portion behind the cutting edge becomes thinner toward the tip, allowing for sharper, more precise cuts and easier slicing. This is particularly beneficial for knives used for fine work. A uniform distal taper reduces overall weight at the tip, making the knife easier to handle and maneuver. This improves control during delicate tasks and reduces fatigue during extended use.
Hands On
My dehydrator is used year-round. Venison or other game meat is preferred. This is for multiple reasons. Hunting is one of my favorite activities. Plus, the cost to purchase store-bought meat is depressing. However, I will succumb to purchasing and then preparing accordingly for jerky if hunting season is too far away.
The Shelter Cove is not just an asset when dealing with your fish catch. The Spyderco Shelter Cove proved ideal for jerky creation. I do not know if its designer Phil Wilson had this in mind or not. Jerky is when the real knife work starts. It is a labor of love. Jerky is delicious, and I am willing to put in the effort to create it. After years of doing this, my conclusion is that diligence spent producing slender strips of meat destined for the dehydrator is worth it. A quarter-inch width, length not that important, performs the best for absorbing your marinade and for an even dehydration process across the entire lot slid into the dehydrator.

The Shelter Cove’s point is more acute than a typical butcher’s boning knife’s more subtle tip. Definitely can see where this is a plus for the Shelter Cove when running along the spine of a fish trying to capture a filet for a bankside brunch. However, this same profile allows for precise cutting when working on a deer’s hindquarter as well. The flexible blade allows for “bending” to follow the contours of the meat for deboning poultry, trimming small bones from beef tenderloin or game meat, and cutting around joints without damaging the surrounding meat, trimming fat or silver skin. The Shelter Cove’s flexibility glides along curved bones.
